Glude or anyone else with experience here, could you shed some light on these Stahl's kits for me? Are they DIY lettering? Where can one pick one up or find more info if so? Neither a GSBB nor a Google search was particularly informative here.

Stahls' only sells wholesale, so you can only get their products with the help of someone with an account there.
However, there are ways around it. What kind of lettering/numbering project did you have in mind? It's entirely possible to do a completely accurate, pro-looking job for less than $3 in materials, if you don't mind doing all the labor yourself. There was a link posted a while back for a place that sold bulk tackle twill, but I can't find it at the moment.
Pro kits are very overpriced, as the NHLPA takes a huge licensing percentage of the sales. I do my own customization, and I save a lot of money that way. Let me know if you have any questions.
Here's one I did using bulk material. It probably cost about $2 and about an hour of my time.
Edit - just found the link, from a post by bc30 from last May.

I'm actually just looking to letter a single RBK platinum practice jersey of mine. I'll definitely investigate this as an option, but it may end up just being easier to ask a local shop to handle it.

My work team is using these Atlanta thirds with classic lettering instead of a crest.
We went with this jersey cuz we're footing the bill outselves and wanted a colour that wouldn't conflict with other teams we might play in tournaments. (We didnt want to pay for home and away jerseys!) The blue is light enough to not conflict with the usual blue hockey shirts, yet dark enough to not conflict with any white shirts.
For scrimmages I'm currently wearing a stock Leafs "grey stripe" jersey. I dunno what the idea behind this jersey is, but the grey strip seems to add some class to it.
I have a Vancouver third jersey from before Luongo went there. Now I'd really like a Luongo Cannucks Vintage Jersey (and matching pads-n-gloves, of course!)

www.stahls.com FYI Stahls products are patented as stated in their catalog" beware of imitators, 73 yrs in business...Stahl's has often been imitated but never equaled". Makers of NHL and MlB numbering and lettering . Gee they must be doing something right...lol...Can't even compare. And yes you have to be a retailer to purchase from them. They don't sell to anybody. There is a difference in Stahls and imitators products. But you also get what you pay for.Got your pm , sent one back.

Or maybe something with the hip, new Col. Sanders logo...

Yes, I did think Prusek was gonna be a #1 Sens goalie, I was wrong on that one eh?
This is the jersey I wear in leagues currently, Ak Bars Kazan

I assume you're being sarcastic?
I only own 3 authentique jerseys out of like 40 or so, the rest are semi-pro, never felt the need to spend that much money for an authentique when a semi-pro is perfectly fine.
